
Sylvaner grappa. The white Silvaner or Sylvaner is one of the oldest cultivated vine varieties. In South Tyrol it is grown mainly in the Isarco valley, the northernmost wine producing area in Italy. The specific taste of Sylvaner, more than most wines, depends in particular on the soil composition. On clayey soils it remains fairly neutral; however the gravelly soil, rich in minerals, of the Bressanone region with its specific micro-climate, result in a spicy mineral, elegant Silvaner, whose aroma is reminiscent of fresh straw and gooseberry. The Zu Plun distillery gets the pomace for its particularly pure, characteristic Sylvaner Grappa from the Köferer Hof vineyard at Neustift near Bressanone.
